It is what I call a lazy cooking for a lazy day but yet simply complete and does not need any other dishes to go with :-). My kids usually relish it...and so do I :-)
Preparation Time: 10 minutes| Cooking Time: 5 minutes| Serves 2 to 4
Ingredients :-
- 1 1/2 tablespoon Vegetable Oil
- 3/4 quarter of a whole Brocolli, cut to small pieces
- 3/4 quarter of a whole Cauliflower, cut to small pieces
- 3/4 Inch ginger - sliced thinly
- 1 1/2 tablespoon crushed garlic/minced garlic
- 300 gms of Chicken breast cut into small cubes
- 1/4 chicken stock cube
- Salt to taste
- 1 teaspoon soya sauce/any vegetable or liquid seasoning/oyster sauce
- 2 Dash of white pepper
- Coriander leaves for garnishing
- You could also add in baby corn and green peas whole vegetable
- Soak the vegetables in hot boiling water , keep aside and cover
- Heat up wok/pan and add the cooking oil - medium heat
- Add garlic and ginger into the oil and fry them till the garlic is rich golden yellow, make sure not to burn the garlic.
- Toss in Chicken, add in salt, chicken stock, 2 dashes of white pepper, soya sauce/seasoning liquid. Stir- Fry Continuously until chicken is properly cooked.
- While waiting for chicken to cook, drain out water from the vegetables. Add into the wok once the chicken is cooked.
- After tossing in the vegetables, give it a few stirs and mix well and immediately take out to ensure the vegetables are not overcooked.
- Garnish with coriander leaves
- Serve immediately with hot rice
